PREPARING THE MACHINE FOR USE
Secure the machine to the table using the special clamp and place the handle into the rollers' hole. When using the machine for the first time, it is necessary to clean it with a dry cloth to remove excess oil. For cleaning the rollers, pass a small amount of dough through them, which should be discarded afterward.
PREPARING THE MIXTURE
Measure for 6 people.
Ingredients: 500 gr soft wheat flour and 5 eggs; you can use 1 cup of water instead of 5 eggs. For delicious pasta, mix 250 gr of soft wheat flour with 250 gr of hard wheat flour. Do not add salt! Place the flour in a bowl and pour the eggs into the center. Mix the eggs with a fork, ensuring they completely blend with the flour. Knead the resulting dough by hand until it becomes completely homogeneous and of the desired consistency. If the dough is too hard, add water; if it's too soft, add flour. Properly kneaded dough should never stick to your fingers. Remove the dough from the bowl and place it on a lightly floured table. If necessary, continue kneading the dough with your hands and cut it into small pieces. A tip: do not use eggs straight from the refrigerator!
PREPARING THE DOUGH AND PASTA WITH “ATLAS”
Pull the regulator of the machine outward and set it to number 1, ensuring the two smooth rollers are completely open (approximately 3 mm). Pass a piece of dough through the rollers by turning the handle.
Fold the dough in half, adding flour to the center if necessary, and repeat this operation 5-6 times. Once the dough has a uniform shape, set the regulator to number 2 and pass it through the rollers only once. Then pass it once through number 3 until reaching the desired thickness (min. thickness – 0.2 mm n..9). Cut the dough crosswise into lengths of approximately 25 cm (=10”) with a knife, place the handle into the cutting cylinders' hole, and while turning it, pass the dough through to obtain the preferred type of pasta.
If desired, pass through the front cutter for fine pasta (1.5 mm TAGLIERINI) or the middle cutter for thick pasta (6.5 mm FETTUCCINE).
Boil a large amount of salted water where you will cook the pasta (approximately 4 liters for 1/2 kg of pasta). Fresh pasta cooks quickly, from 2 to 5 minutes depending on thickness. Stir carefully and drain after cooking.
