The lever system of the professional coffee machine allows the barista to manually adjust the pre-infusion time for each source: when the lever is down, the boiler's hot water enters the group, wetting the coffee cake. The longer the barista holds the lever down, the longer the pre-infusion stage. A skilled barista waits for the first coffee drops to come out of the mouth and then lifts the lever; this means the entire coffee cake is soaked.
