The lever system of the professional coffee machine allows the barista to manually set the pre-infusion time for each source: when the lever is down, the hot water from the boiler enters the group, wetting the coffee cake. The longer the barista keeps the lever down, the longer the pre-infusion stage will be. A skilled barista waits for the first coffee drops to come out of the spout and then raises the lever; this means that the entire coffee cake is wet.
