PREPARING THE MACHINE FOR USE
Secure the machine to the table using the special clamp and place the handle in the hole of the rollers. When using the machine for the first time, it is necessary to clean it with a dry cloth to remove excess oil. To clean the rollers, pass a small amount of dough through them, which should be discarded afterwards.
PREPARATION OF THE MIXTURE
Measurement for 6 people.
Ingredients: 500 gr soft wheat flour and 5 eggs; you can use 1 cup of water instead of 5 eggs. For a delicious pasta, mix 250 gr soft wheat flour with 250 gr hard wheat flour. Do not add salt! Put the flour in a bowl and pour the eggs in the center. Stir the eggs with a fork ensuring they are completely mixed with the flour. Knead the obtained dough by hand until it becomes completely homogeneous and consistent. If the dough is too hard, add water; if too soft, add flour. The right consistency dough should never stick to your fingers. Remove the dough from the bowl and place it on a lightly floured table. If necessary, continue kneading by hand and cut into small pieces. A tip; do not use eggs that have just been taken out of the refrigerator!
PREPARATION OF DOUGH AND PASTA WITH “AMPIA”
Pull the machine's regulator outwards and set it to number 1 so that the two flat rollers are completely open (approximately 3 mm). Pass a piece of dough between the rollers by turning the handle.
Fold the dough in half and add flour to the center if necessary, repeating this operation 5-6 times. Once the dough has taken a uniform shape, set the regulator to number 2 and pass through the rollers only once. Then pass once more at 3 until the desired thickness is reached (min. thickness - 0.2 mm n..9). Cut the dough crosswise into approximately 25 cm lengths (=10”) using a knife, place the handle in the cutting rollers hole, and, while turning it, pass the dough through to obtain the preferred type of pasta.
If you wish, you can obtain fine pasta (1.5 mm TAGLIERINI) by passing through the front comb or thick pasta (6.5 mm FETTUCCINE) by passing through the middle comb.
Note1 – If the rollers 'do not cut' or do not separate the dough well, it means the dough is too soft. In this case, we recommend adding flour to the mixture and passing the dough through the flat rollers.
Note2 – Ensure the dough is not too hard; otherwise, the rollers will not be able to take the dough.
Boil a large amount of salted water into which you will empty the pasta (approximately 4 liters for 1/2 kg pasta). Fresh pasta cooks in a short time, from 2 to 5 minutes depending on the thickness. Stir carefully and drain after cooking.
MAINTENANCE OF THE MACHINE
1-During use, occasionally clean the scrapers under the flat rollers with a piece of kitchen paper.
2-Never wash the machine with water or in a dishwasher!
3-To clean the machine after use, use a brush and a wooden stick.
4-If necessary, drop a few drops of vaseline oil at the ends of the cutting rollers.
5-Do not insert knives or kitchen cloths between the rollers.
6-After use, store the machine and its accessories in their boxes.
