PREPARING THE MACHINE FOR USE

Secure the machine to the table using the special clamp and insert the handle into the hole of the rollers. When the machine is used for the first time, it should be cleaned with a dry cloth to remove excess oil. For cleaning the rollers, pass a small amount of dough through them, which will be discarded later.

PREPARATION OF THE MIXTURE

Measurement for 6 people.

Ingredients: 500 gr soft wheat flour and 5 eggs; you can use 1 cup of water instead of 5 eggs. For delicious pasta, mix 250 gr soft wheat flour with 250 gr hard wheat flour. Do not add salt! Pour the flour into a bowl and crack the eggs into the center. Stir the eggs with a fork to mix them completely with the flour. Knead the obtained dough by hand until it becomes completely homogeneous and reaches the desired consistency. If the dough is too hard, add water; if it is too soft, add flour. Properly kneaded dough should never stick to your fingers. Remove the dough from the bowl and place it on a lightly floured table. If necessary, continue to knead by hand and cut into small pieces. A tip; do not use eggs just taken out of the refrigerator!

PREPARATION OF DOUGH AND PASTA WITH “ATLAS”

Pull the machine's regulator outwards and set it to number 1 so that the two flat rollers are fully open (approximately 3 mm). Pass a piece of dough between the rollers by turning the handle.

Fold the dough in half and repeat this operation 5-6 times, adding flour to the center if necessary. When the dough has a uniform shape, set the regulator to number 2, and pass it through the rollers only once. Then pass it once more through number 3 until reaching the desired thickness (min. thickness - 0.2 mm n..9). Cut the dough crosswise into lengths of approximately 25 cm (=10”) with a knife, place the handle in the hole of the cutting rollers, and turn it while passing the dough through to obtain the preferred type of pasta.

  • If you wish, you can pass it through the front cutter to obtain thin pasta (1.5 mm TAGLIERINI) or through the middle cutter to obtain thick pasta (6.5 mm FETTUCCINE).
  • If the rollers do not ‘cut’ or do not separate the dough nicely, it means the dough is too soft. In this case, we recommend adding flour to the mixture and passing the dough through the flat rollers.
  • Make sure the dough is not too hard, otherwise the rollers will not be able to grasp it.

Boil plenty of salted water to empty the pasta into (about 4 liters for 1/2 kg of pasta). Fresh pasta cooks in a short time, from 2 minutes to 5 minutes, depending on its thickness. Stir gently and drain after cooking.

MAINTENANCE OF THE MACHINE

  • During use, clean the scrapers under the flat rollers occasionally with a piece of kitchen paper.
  • Never wash the machine with water or in the dishwasher!
  • After use, clean the machine with a brush and a wooden stick
  • If necessary, drop a few drops of petroleum jelly on the ends of the cutting rollers.
  • Do not insert knives or dishcloths between the rollers.
  • After use, store the machine and its accessories in their boxes.
