USAGE AND MAINTENANCE INFORMATION

PREPARING THE MACHINE FOR USE

Secure the machine to the table using the special clamp and place the handle into the hole of the cylinders. Before using the machine for the first time, it is necessary to clean it with a dry cloth to remove excess oil. For cleaning the cylinders, pass a small amount of pasta dough through them and then dispose of it.

PREPARING THE MIXTURE

Measurement for 6 people.

Ingredients: 500 grams of soft wheat flour and 5 eggs; you can use 1 cup of water instead of 5 eggs. For delicious pasta, mix 250 grams of soft wheat flour with 250 grams of hard wheat flour. Do not add salt! Take the flour into a bowl and break the eggs in the center. Mix the eggs with a fork and ensure they are completely mixed with the flour. Knead the obtained dough with your hands until it is completely homogeneous and reaches the right consistency. If the dough is too hard, add water, if too soft, add flour. The perfect dough should never stick to your fingers. Remove the dough from the bowl and place it on a lightly floured table. If necessary, continue kneading the dough with your hands and cut it into small pieces. A tip; do not use eggs just taken out of the refrigerator!

PREPARING DOUGH AND PASTA WITH “ATLAS”

Pull the regulator of the machine outwards and set it to number 1, so that the two flat rollers are completely open (approximately 3 mm). Turn the handle and pass a piece of dough between the rollers.

Fold the dough into two and, if necessary, add flour in its center and repeat this operation 5-6 times. When the dough has a regular shape, set the regulator to number 2 and pass it only once between the rollers. Then pass it once at 3 until the desired thickness is achieved (min. thickness - 0.2 mm n..9). Cut the dough crosswise with a knife into approximately 25 cm lengths (10”) and place the handle into the hole of the cutting rollers, and while turning it, pass the dough to obtain the preferred pasta type.

If you wish, you can get thin pasta (1.5 mm TAGLIERINI) by passing it through the front blade or thick pasta (6.5 mm FETTUCCINE) by passing it through the middle blade.

  • If the rollers do not 'cut' or do not separate the dough nicely, it means the dough is too soft. In this case, we suggest adding flour to the mixture and passing the dough through the flat rollers.
  • Ensure the dough is not too hard, otherwise the rollers will not be able to grab it.

Boil a large amount of salted water in which you will empty the pasta. (approximately 4 liters for 1/2 kg of pasta) Fresh pasta cooks in a short time, from 2 to 5 minutes depending on its thickness. Stir carefully and strain after cooking.

MAINTENANCE OF THE MACHINE

  • During use, occasionally clean the scrapers underneath the flat rollers with a piece of kitchen paper.
  • Do not wash the machine with water or in the dishwasher!
  • To clean the machine after use, use a brush and a wooden stick.
  • If necessary, add a few drops of Vaseline oil at the ends of the cutting rollers.
  • Do not insert knives or cloths between the rollers.
  • After use, store the machine and its accessories in their boxes.
