PREPARING THE MACHINE FOR USE
Fix the machine to the table using the special clamp and insert the handle into the hole of the rollers. When the machine is used for the first time, it is necessary to clean it with a dry cloth to remove excess oil. For the cleaning of the rollers, pass a small amount of dough through them, which should be discarded later.
PREPARING THE MIXTURE
Measurement for 6 people.
Ingredients: 500 g soft wheat flour and 5 eggs; you can use 1 cup of water instead of 5 eggs. For a delicious pasta, mix 250 g of soft wheat flour with 250 g of hard wheat flour. Do not add salt! Put the flour in a bowl and crack the eggs in the center. Mix the eggs with a fork and ensure they are completely blended with the flour. Knead the obtained dough with your hands until it is completely homogeneous and has the right consistency. If the dough is too hard, add water; if too soft, add flour. The dough of the right consistency should never stick to your fingers. Remove the dough from the bowl and place it on a lightly floured table. If necessary, continue kneading the dough with your hands and cut it into small pieces. A recommendation; do not use eggs that have just been taken out of the refrigerator!
PREPARING THE DOUGH AND PASTA PRODUCED WITH “ATLAS”
Pull the regulator of the machine outward and set it on the number 1 so that the two flat rollers are completely open (approximately 3 mm). Pass a piece of dough through the rollers by turning the handle.
Fold the dough in half and repeat this operation 5-6 times, adding flour in the middle if necessary. Once the dough has a uniform shape, set the regulator to number 2, pass it through the rollers only once. Then pass it through once more at number 3 until reaching the desired thickness (min. thickness - 0.2 mm n..9). Cut the dough crosswise into lengths of about 25 cm (=10”) with a knife. Place the handle into the hole of the cutting rollers, and while turning it, pass the dough to obtain the preferred type of pasta.If you wish, you can obtain thin pasta (1.5 mm TAGLIERINI) by passing it through the front gear or thick pasta (6.5 mm FETTUCCINE) by passing it through the middle gear.
Boil plenty of salted water to pour the pasta into. (Approximately 4 liters for 1/2 kg of pasta) Fresh pasta cooks in a short time, from 2 to 5 minutes depending on its thickness. Stir carefully and drain after cooking.
