Shock cooling, carried out by monitoring the correct time and temperature parameters, prevents bacterial growth. This extends the shelf life of these foods. At the end of the shock cooling process, the product can be stored in the refrigerator at +3°C for 5-6 days in compliance with HACCP standards.
At -41°C, shock freezing rapidly brings the product temperature to -18°C. This process prevents the formation of large ice crystals, allowing the product to be stored for several months without spoilage.
