Blast chilling performed by monitoring the correct time and temperature parameters prevents the proliferation of bacteria. This extends the shelf life of foods. At the end of the blast chilling process, the product can be stored at +3°C in the refrigerator for 5-6 days in compliance with HACCP standards.
Blast freezing at -41°C quickly brings the product's core temperature to -18°C. This process prevents the formation of macro ice crystals, allowing the product to be stored for several months without deterioration.
