CHIP PREPARATION;

The chips should be moist but not wet. Mix well and wait a few minutes for the chips to absorb the water. It is sufficient for them to stick when held between your fingers. Moistening the chips is very important. This way, you lower the burning temperature and obtain a dense, transparent, non-toxic smoke that reveals the essences and flavor-enhancing elements of the wood. NEVER USE DRY CHIPS.
