1 - PREPARING THE MACHINE FOR USE
Secure the machine to the table with the help of the clamp and place the turning handle into its slot. Before first use, the machine should be wiped with a dry cloth. To clean the dough opening roller, pass a piece of dough through the dough opening roller a few times and discard this dough.
2 - PREPARATION OF THE MIXTURE
For one serving of noodles, the basic ingredients required are approximately 125 grams of wheat flour and one egg. Note: It is not recommended to use an egg that has just come out of the refrigerator for the ideal taste! For four people, approximately 500 grams of wheat flour and 4 eggs can be used. Optionally, you can use water instead of the egg. (1 egg = approximately 80 ml water)
Add the eggs to the center of the flour and beat with a fork until completely mixed with the flour. Knead with your hand until the dough comes together and becomes homogeneous. If the mixture is too dry, add a little water; if it is too moist or soft, add a little flour. A good mixture should never stick to your fingers. Take the mixture from the bowl and place it on a lightly floured surface. If necessary, divide it into small pieces using a knife.
3 - MAKING THE DOUGH AND NOODLES
Your machine has a dough thickness adjustment knob. Pull out and turn the adjustment knob of your machine to position “1”. In this way, the two flat rollers will be fully open. Pass a piece from the mixture through the machine by turning the handle. Repeat this process 5-6 times, if necessary, you can fold the dough and pass it through or add a little flour to the middle parts.
When the dough takes a smooth shape, pass the dough once through the rollers at position “2”, then in the same way at position “3”. Continue until you reach the desired thickness. Divide the dough into pieces 25 cm long with the help of a knife. To use the cutting rollers, place the handle in its slot, turn it slowly, and pass the dough through to obtain the noodles in the desired shape.
Note 1: If the rollers are not cutting, it is because the dough is too soft. In such a case, add a little more flour to the mixture and pass the dough through the flat rollers again.
Note 2: Similarly, if the dough is too dry, it can cause the rollers not to cut. Sprinkle a little water on the mixture and pass it through the flat rollers again.
