Shock cooling, carried out by monitoring the correct time and temperature parameters, prevents bacteria formation, extends the shelf life of food. At the end of the shock cooling process, the product can be stored in the refrigerator at +3°C for 5-6 days in compliance with HACCP standards.
Shock freezing at -41°C rapidly brings the product's internal temperature to -18°C. This process prevents the formation of large ice crystals, allowing the product to be stored for several months without spoilage.
