Blast chilling performed by monitoring the correct time and temperature parameters prevents the proliferation of bacteria. This extends the shelf life of foods. At the end of the blast chilling process, the product can be stored in the refrigerator at +3°C for 5-6 days in compliance with HACCP standards.
Blast freezing at -41°C rapidly brings the product's core temperature to -18°C as quickly as possible. This process prevents the formation of macro ice crystals, allowing the product to be preserved for several months without deterioration.
